Asparagus Chickpea Soup with Shiitake Mushrooms

It’s (one of) my favorite times of the year. In mid to late spring, the asparagus beds, in their quintessential perennial nature, begin to gift us with their gorgeous green spears of delectableness. What makes this yearly happening so ceremoniously glorious is that this is the time I am planting most vegetables, not harvesting. Simply sublime.

Much like any garden harvest, you get a LOT of bounty in a short burst of time. Admittedly, I had become somewhat lazy and fell short of my potential to get creative.
