Coconut Curry Chickpeas


1 tbsp olive oil
1 medium onion
1 medium carrot
1 cup yam
1 small jalapeno
1 red bell pepper
3 cloves garlic
2 (15 oz) cans of chickpeas (garbanzo beans)
1/3 cup of honey
1/2 cup veggie bouillon
1 cup coconut milk
LOTS of curry!
1 teaspoon each of cinnamon, nutmeg and clove


Chop onion, carrot, yam, garlic and peppers and sauté in olive oil over medium heat for 2-3 minutes. Add seasonings, cooking for 2-3 minutes. Add honey and veggie bouillon- cook for 3 minutes. Add chickpeas to sauté pan and stir. Add coconut milk and continue to cook on medium until most of the liquid is absorbed. Reduce heat to low and simmer for another 5 minutes.
