Yam Quinoa Fritters

Yams. So delish and so healthy to eat. I love the versatility of yams. I can incorporate them into a savory dish with other vegetables and ingredients or go more towards the sweeter route, including a variety of scrumptious desserts.

Yams offer a host of spectacular health benefits. They are a good source of vitamin C and they provide good amount of fiber, potassium, manganese, and metabolic B vitamins.

Quinoa totally rock star. It’s gluten-free, high in protein and one of the few plant foods that contain all nine essential amino acids. It is also high in fiber, magnesium, B vitamins, iron, potassium, calcium, phosphorus, vitamin E and various beneficial antioxidants.

These Yam Quinoa Fritters are not only great as a breakfast meal, they make an awesome snack as well. They are truly delicious and the yogurt sauce is just icing on the cake.

Yam Quinoa Fritter Ingredients:

1 large yam-grated
1 cup cooked white quinoa
1 tbsp coconut oil
1 large egg
1 tbsp honey
1 tsp orange zest
1 tbsp orange juice
1/2 tsp nutmeg
1/2 tsp cinnamon

Preheat oven 375° . Melt coconut oil in sauté pan. Add yam and cook for 3-4 minutes. Add honey, orange zest and juice, and seasonings. Cook for an additional 2 minutes. Remove from heat and let sit for 3-4 minutes. Stir in egg until mixed well.

Form fritters into thin patties about 3 inches in diameter and 1/8 inch thick. Place on baking sheet lined with parchment paper. Bake 10-12 minutes each side.

Top with Banana Yogurt Sauce and enjoy!

Banana Yogurt Sauce Ingredients:

1 small banana-mashed
1 tbsp Greek yogurt
1/4 cup almond milk

Blend ingredients until smooth and creamy.
